This recipe is my take on my mom’s famous Irish coffee, with a sweet surprise…caramel! It pairs incredibly well with fresh scones or Irish soda bread.
I start out with 2 brown sugar cubes. If you don’t have those handy, just use a teaspoon of brown sugar. Next, pour your whiskey over the cubes to dissolve them. Add your caramel syrup and your fresh, hot coffee.
You can then top with your favorite canned whipped cream but to get the perfect whipped cream float you’ll need to make your own. Luckily it’s very easy to make at home.

How to make whipped cream
I recently had some leftover whipping cream in my refrigerator so decided I would try my hand at some homemade whipped cream. I put about a cup of very cold heavy whipping cream in a jar, added a touch of vanilla extract and a couple teaspoons of sugar. From there, I shook the thing like crazy for a few minutes. When I opened the lid, it was thick and delicious! You could also add some baileys or even coffee liqueur for an extra boozy topping. You can also whip the cream with a whisk or milk frother.
Lastly, drizzle caramel syrup over the top for the perfect coffee garnish.
