Ingredients

  • 1 cup water
  • 1 cup granulated sugar or 1:1 low-carb sweetener
  • 2 tablespoons culinary lavender buds Lavandula angustifolia
  • 3 tablespoons dried butterfly pea tea flowers

Method

  1. Combine Base Ingredients: In a small saucepan, bring the water and sugar to a gentle boil over medium heat, stirring occasionally until the sugar completely dissolves.
  2. Add Botanicals: Reduce the heat to low. Add the culinary lavender buds and dried butterfly pea flowers to the warm syrup.
  3. Simmer & Infuse: Allow the mixture to simmer gently for 3 to 5 minutes, then remove the saucepan from the heat source completely.
  4. Steep: Cover the pan with a lid and let the syrup steep for 15 to 20 minutes. The longer it steeps, the deeper the floral flavor and blue pigment will become.
  5. Strain: Place a fine-mesh strainer over a glass jar or measuring cup. Pour the syrup through to strain out the lavender buds and flower petals. Gently press on the flowers with the back of a spoon to extract all the liquid, then discard the solids.
  6. Cool & Store: Allow the syrup to cool to room temperature before sealing with an airtight lid. Store in the refrigerator and use whenever you want to add magic to your drinks!
