Vanilla Fig Margarita

Ingredients

  • 2 oz tequila
  • 1/2 oz vanilla liqueur
  • 1 oz freshly squeezed lime juice
  • 3/4 oz fig syrup
  • Salt or sugar for the rim
  • Fig for garnish

Fig Syrup

  • 1 cup fresh figs stemmed and chopped
  • 1 cup granulated sugar
  • 1 cup water
  • 1/2 teaspoon vanilla extract optional
  • Dash of lemon juice

Instructions

  • Rub a lime wedge around the rim of a cocktail glass and dip it into a shallow dish of salt or sugar.
  • Combine the tequila, vanilla liqueur, lime juice, and fig syrup in a cocktail shaker filled with ice.
  • Shake until well combined and ice cold.
  • Strain the mixture into the prepared glass.
  • Add a fresh fig as garnish.

Fig Syrup

  • Creating the Syrup: In a saucepan, combine the chopped figs, granulated sugar, water, and a dash of lemon juice. The lemon juice helps to enhance the figs’ natural flavor.
  • Optional Vanilla Extract: For an extra layer of richness, you can add 1/2 teaspoon of vanilla extract to the mixture. This is entirely optional but can enhance the vanilla notes in your Vanilla Fig Margarita.
  • Simmering the Syrup: Place the saucepan over medium heat and stir until the sugar dissolves. Once the mixture begins to simmer, reduce the heat to low and let it simmer gently for about 10-15 minutes. This allows the figs to release their juices and infuse the syrup with their flavor.
  • Straining and Cooling: After simmering, remove the saucepan from heat and let the syrup cool. Once it has cooled to room temperature, strain the syrup to remove the fig solids, leaving you with a smooth and flavorful fig syrup.
