Vanilla Fig Spritz Recipe

Ingredients

  • ¾ oz vanilla fig syrup
  • 1 oz elderflower liqueur
  • 3 oz prosecco
  • 1 oz club soda

Vanilla Fig Syrup

  • 1 cup water
  • 1 cup sugar
  • 1 cup chopped figs
  • 1 vanilla pod sliced (or 1 teaspoon vanilla extract)

Instructions

  • Fill a large wine or spritz glass with ice.
  • Add the vanilla fig syrup and elderflower liqueur. Stir gently.
  • Top with prosecco and a splash of club soda.
  • Garnish with a fresh fig slice or sprig of thyme. Serve immediately.

Vanilla Fig Syrup

  • Combine water, sugar, and figs in a small saucepan.
  • Add vanilla pod and seeds, then bring to a simmer.
  • Simmer 8–10 minutes, stirring occasionally.
  • Mash the figs gently and steep for an extra 5 minutes for deeper color.
  • Remove from heat, let cool, and strain.
  • Store in the refrigerator for up to 2 weeks.
