My mint comes up early in the season and nearly takes over the whole garden by mid summer. Sometimes I don’t even know what to do with it all. Enter, the mojito.

What is a Mojito?
The mojito is a cocktail of Cuban origin. It’s a simple cocktail with only 5 ingredients: rum, lime juice, sugar, mint and club soda. It’s a little sweet but oh so refreshing and perfect for hot summer days.
With a classic mojito the sugar and mint are muddled together before adding rum, lime juice and club soda or soda water. There are many variations on the mojito and it’s a flavor combination that can easily be added to with other fresh fruits and herbs.
What kind of rum to use?
White rum is used for a mojito and Bacardi is a popular rum choice for this drink. Others to try are Flor de Caña 4, Mount Gay Silver or Cruzan Light Rum. Any silver rum that you have available will work for a mojito. If you want that extra coconut flavor in your coconut mojito you can use Malibu rum which is a coconut flavored rum.

What is cream of coconut?
Cream of coconut
Cream of coconut should not be confused with coconut cream. Cream of coconut is coconut cream that is sweetened with sugar. It tastes much sweeter than coconut cream and is used in many cocktail recipes. You can usually find it in grocery stores or on Amazon.
Substitutions
If you can’t find cream of coconut you just need something that will give you a sweet coconut flavor. Sweetened condensed milk and coconut extract could be an option or simply a coconut syrup. If you have Malibu rum you can simply leave out the cream of coconut for a less creamy cocktail that still has the coconut flavor.

Coconut Mojito Cocktail Recipe
Coconut Mojito
Ingredients
- 4-8 mint leaves
- 2 oz white rum
- 1/2 oz fresh lime juice
- 1/2 oz simple syrup
- 1 oz cream of coconut
- 1 oz club soda
Instructions
- Add mint to a cocktail shaker and muddle. Add ice, rum, lime juice, syrup and cream of coconut. Shake and strain into a glass with ice. Top with club soda. Garnish with a lime wheel and a sprig of mint.
