This recipe combines rich pumpkin spice syrup, espresso, creamy milk, and a dollop of marshmallow fluff for a decadent drink that tastes like autumn in a mug. With a full bottle of pumpkin spice syrup in your refrigerator you could enjoy the perfect autumn latte in the comfort of your own home, anytime.

1 cup water
1 cup light brown sugar
3 tbsp pumpkin purée

When Are Pumpkins in Season?
Pumpkins are in peak season from September through November in the United States. They can usually be found year round in canned form, fresh pumpkins are harvested once the weather cools down and leaves start to change. This is why pumpkin spice flavored foods and drinks are synonymous with autumn.
If you’re making your own pumpkin purée at home, pumpkin season is the best time to do so. Smaller sugar pumpkins are ideal for baking and cooking because they have sweeter, more tender flesh compared to large carving pumpkins. However canned pumpkin purée is perfectly acceptable for recipes like this latte and it’s convenient and available year round.
What Is Pumpkin Spice?

However, when it comes to frothing, lower-fat milk or plant-based options often perform better. Here are the best options for frothing:
- Low-fat or skim milk

For this recipe, I recommend using low-fat dairy milk or oat milk for the best froth.
How Long Can I Store the Syrup?

Homemade pumpkin spice syrup can be stored in the refrigerator for up to two weeks in a sealed jar or bottle. Make sure it’s completely cooled before transferring it to your container. If you notice any separation, just give it a good shake before using.
What Is Marshmallow Fluff?

Marshmallow fluff is a soft, spreadable version of marshmallows, often used in desserts or as a topping for hot drinks. It has the same sweet, vanilla flavor as marshmallows but a whipped, creamy texture that melts well into warm liquids.

Pumpkin Marshmallow Latte Recipe
Ingredients
- 2 tbsp pumpkin spice syrup
- 1 cup milk low-fat or oat milk recommended for frothing
- 1 shot 30 ml espresso
- 1 2 tbsp marshmallow fluff
For the Froth
- ½ cup milk
- 1 tbsp pumpkin spice syrup
Pumpkin Spice Syrup
- 1 cup water
- 1 cup light brown sugar
- 3 tbsp pumpkin purée
- 1 tsp cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
Instructions
- Add marshmallow fluff to the inside of your serving glass or mug.
- In a saucepan or milk frother, heat 1 cup of milk until warm but not boiling. Stir in the pumpkin spice syrup.
- Brew a shot of espresso and pour it into the prepared glass.
- Pour the warm pumpkin-spiced milk over the espresso.
- Froth ½ cup milk with 1 tbsp pumpkin spice syrup until foamy, then spoon the foam on top of the latte.
Pumpkin Spice Syrup
- In a saucepan, combine water and sugar. Heat over medium, stirring until sugar dissolves.
- Add pumpkin purée, cinnamon, ginger, nutmeg, and cloves. Simmer for 5–7 minutes, stirring occasionally.
- Remove from heat and let cool slightly.
- Transfer to a jar or bottle and store in the refrigerator for up to two weeks. Shake before using.
