What is Culinary Lavender?
Not all lavender is created equal, especially when it comes to cooking and baking. Culinary lavender refers specifically to varieties of the lavender plant that have been grown, harvested, and processed safely for human consumption.
The most common and prized variety for culinary use is Lavandula angustifolia, often called English lavender. Unlike wild or ornamental varieties, English lavender contains significantly less camphor, giving it a sweet, gentle, floral taste with subtle notes of citrus and mint. Ornamental lavender, by contrast, can taste unpleasantly soapy, medicinal, or bitter.
Using high-quality culinary lavender buds ensures your syrup achieves a delicate floral fragrance without overpowering your drinks or desserts. Beyond its delightful flavor, lavender has been cherished for centuries for its relaxing properties, helping to soothe stress and promote a calm mind.

What is Butterfly Pea Tea?
The secret behind the color-changing phenomenon of this syrup lies in butterfly pea tea, an herbal infusion made from the dried petals of the Clitoria ternatea plant, native to Southeast Asia.
For centuries, butterfly pea flowers have been used in traditional drinks and cooking throughout Thailand, Vietnam, and Malaysia due to their striking natural cobalt-blue hue and mild, earthy flavor similar to fine green tea.
What makes butterfly pea flower tea truly unique is its natural pH sensitivity:
- Neutral Environment: In a pH-neutral liquid (like water or basic sugar syrup), the anthocyanin pigments remain a vivid sapphire blue.
- Acidic Environment: When exposed to acids (such as lemon juice, lime juice, or vinegar), the drop in pH alters the pigment’s molecular structure, causing it to shift dynamically into bright purple, violet, or magenta.
Because it is naturally caffeine-free and loaded with antioxidants, butterfly pea tea provides a stunning visual element without introducing artificial food dyes or harsh chemical additives.

How to Use This Syrup
This Magic Potion Lavender Syrup is as versatile as it is beautiful. A splash of this floral liquid can transform everyday beverages and treats into show-stopping creations:
1. Color-Changing Lemonades & Mocktails

4. Breakfast & Dessert Drizzles
Drizzle the syrup warm over freshly made pancakes, waffles, French toast, or vanilla bean ice cream for an unexpected pop of floral flavor and color.

How to Make a Low-Sugar Version
If you are monitoring your sugar intake or following a low-carb diet, you can easily adapt this recipe into a keto-friendly simple syrup without sacrificing color or flavor.
Choose the Right Sweetener
Traditional simple syrup relies on granulated white sugar to build volume and viscosity. To make a low-sugar alternative, substitute granulated sugar with a 1:1 natural sugar replacement:
- Allulose: The best choice for simple syrups. Allulose dissolves completely, does not crystallize when chilled, and mimics the mouthfeel of real sugar with zero net carbs.
- Erythritol/Monk Fruit Blends: Works well, though syrups made with erythritol may form small crystals in the refrigerator after a few days. Reheat gently to dissolve any crystals before serving.
Adjusted Ratio
Use 1 cup of liquid sweetener or 1 cup of 1:1 sugar replacement in place of white sugar. Follow the standard recipe instructions below, keeping the steeping time the same to extract maximum flavor and color.

Tips for Storing the Syrup
Proper storage keeps your herbal syrup fresh, fragrant, and vibrant for weeks:
- Sterilize Your Glassware: Pour the finished syrup into a clean, airtight glass bottle or Mason jar. Glass prevents odor absorption and keeps the color crystal-clear.
- Refrigeration is Key: Because this syrup contains natural botanical infusions and no artificial preservatives, store it in the refrigerator at all times. Standard sugar syrup keeps for up to 3–4 weeks, while low-sugar versions are best used within 2 weeks.
- Keep Acids Away: Do not add lemon juice or acidic flavorings directly into the main storage bottle unless you want the entire batch to stay purple permanently. Keep the base syrup blue so you can enjoy the color-changing transformation each time you make a drink!
- Freezing Option: You can freeze the syrup in silicone ice cube trays for up to 6 months. Drop a color-changing lavender ice cube into a glass of lemonade or seltzer for a slow-release visual treat.

Magic Potion Lavender Syrup Recipe
Ingredients
- 1 cup water
- 1 cup granulated sugar or 1:1 low-carb sweetener
- 2 tablespoons culinary lavender buds Lavandula angustifolia
- 3 tablespoons dried butterfly pea tea flowers
Method
- Combine Base Ingredients: In a small saucepan, bring the water and sugar to a gentle boil over medium heat, stirring occasionally until the sugar completely dissolves.
- Add Botanicals: Reduce the heat to low. Add the culinary lavender buds and dried butterfly pea flowers to the warm syrup.
- Simmer & Infuse: Allow the mixture to simmer gently for 3 to 5 minutes, then remove the saucepan from the heat source completely.
- Steep: Cover the pan with a lid and let the syrup steep for 15 to 20 minutes. The longer it steeps, the deeper the floral flavor and blue pigment will become.
- Strain: Place a fine-mesh strainer over a glass jar or measuring cup. Pour the syrup through to strain out the lavender buds and flower petals. Gently press on the flowers with the back of a spoon to extract all the liquid, then discard the solids.
- Cool & Store: Allow the syrup to cool to room temperature before sealing with an airtight lid. Store in the refrigerator and use whenever you want to add magic to your drinks!
