I miss brunch.
In New York, we care deeply for our boozy brunch. It’s a wonderful excuse to throw back a few cocktails before 1pm on a Sunday while eating a waffle the size of your head. It’s just plain American. Pro tip: Do not go shopping after brunch unless you want to come home with a Star Wars themed shower curtain and a contraption that only peels pineapples.
Where the heck am I going with this?
Mimosas! No brunch is complete without a bubbly mimosa or two (or seven?). I decided that, for this version, I would make it extra boozy. Let’s get the party started.
Instead of using a super sugary juice, I decided to use Frankly Organic’s Apple Vodka. This vodka has a touch of ginger which works perfectly in this recipe. The vanilla syrup adds a touch more sweetness and complexity. Prosecco adds the bubbles!
How to make a star apple garnish
Grab your apple and, instead of slicing vertically, chop that sucker along the horizon. The apple seeds make a pretty little star! Remove the seeds and cut in half for the perfect garnish. I recommend Gala or Honeycrisp apples.
This cocktail is perfect any time of the year but really on theme for Thanksgiving or football Sunday in October.
Apple Pie Mimosa
Ingredients
- 1.5 oz apple vodka
- 1/2 oz vanilla syrup
- 3 oz prosecco
Instructions
- Add all ingredients to a champagne glass and gently stir.
- Garnish with apple slices.
