The weather is getting cooler and it’s pumpkin picking season. What could be more a more fitting drink for the early fall than a pumpkin cream cold brew? This recipe is almost a copycat of the Starbuck’s recipe but a little more simple and of course – boozy.
You can make this coffee recipe spiked or without booze though and the cream is so delicious I just want to put it on everything. You could also make the cream and put it on a hot drink as well. I would even add it to a dessert as a topping – it’s that good!
If you’re just looking for a Starbuck’s copycat coffee drink then skip the booze and just add the pumpkin cold cream to your iced or hot coffee.

How to make the perfect cold brew
There are a lot of great pre made cold brews available now and I used Chobani but making your own delicious cold brew at home is easy to do.
To make a perfect cold brew at home that isn’t bitter you will need to allow the ground coffee beans and filtered water to steep over night. This will create a slow infusion that is concentrated and smooth. You can also make a bigger batch and freeze some into ice cubes to use for this recipe.
How to make pumpkin cream
The pumpkin cream is what really makes this recipe special. While you can use other types of cream or milk, whipping cream works the best to get that delicious fluffy cream.
Vegans can use coconut cream as a substitute, the kind that comes in a can. It’s recommended to also refrigerate it overnight before using.
You can use a hand mixer but a hand help milk frother like this one works great.
Just mix you cream or milk, maple syrup, pumpkin puree and pumpkin pie spice and froth until it becomes thick and fluffy. This should only take about 2-5 minutes.

Which coffee liqueur should I use?
You can use any coffee liqueur that you have available. I used one called Jumping Goat for this recipe but Kahlua is usually an easy one to find at any liquor store.
What is Licor 43?
Licor 43 is a sweet vanilla liqueur that is produced in Spain. If you can’t find this liqueur you can substitute with a vanilla syrup.
What is in pumpkin spice?
Pumpkin pie spice is actually a blend of different spices that is commonly used in pumpkin pie. If you don’t have pumpkin pie spice you can mix together the different spices that make up this blend. Use equal parts of ground cinnamon, nutmeg, ginger, and cloves. Even if you only have cinnamon and nutmeg you will still have a pretty tasty drink!
Can I drink this without alcohol?
Yes! This recipe still works really well without the booze. You can also add a little vanilla extract to the cold brew to give it some extra flavor that pairs well with pumpkin. You can also make this as a hot drink if you prefer.

Spiked Pumpkin Cream Cold Brew
Ingredients
- 4 oz cold brew coffee
- 1/4 cup whipping cream or milk
- 1 teaspoon pumpkin puree
- 1/4 teaspoon pumpkin pie spice
- 1 teaspoon maple syrup
- 1 oz coffee liqueur
- 1/2 oz licor 43
Instructions
- To make the cream, mix together whipping cream, pumpkin puree, pumpkin pie spice and maple syrup. Use a milk frother to blend until it becomes thick and fluffy.
- Add ice and cold brew to a glass or mug.
- Add liqueurs and stir.
- Top with pumpkin cream mixture.
- Sprinkle with more pumpkin pie spice.
