
If you’re not sure what to make with Aperol besides your classic Aperol spritz then take a look through these recipes. Some of these are spins on classic cocktails like a spritz or a margarita and some are fun things to try for summer parties like jell-o shots and boozy popsicles. You would be surprised how Aperol can pair well with summer flavors like strawberry or pineapple.

Aperol Spritz Popsicles (Makes 12)
Ingredients
- 2 cups prosecco
- 1 cup Aperol
- 1 cup orange juice
- 1/2 cup club soda
Instructions
- Mix all ingredients in a pitcher and pour into popsicle molds.
- Freeze for at least 6 hours or until solid before serving.
I always use this popsicle mold for my boozy (and non boozy) ice pops.
Aperol Pineapple Margarita
Ingredients
- 2 oz tequila
- 1/2 oz Aperol
- 1 oz pineapple juice
- 1 oz lime juice
- 1/2 oz agave nectar
Instructions
- Shake all ingredients with ice and strain into a salt-rimmed glass.
- Garnish with a pineapple wedge.
Aperol Strawberry Mimosa
Ingredients
- 3 oz chilled prosecco
- 1 oz Aperol
- 1/2 oz fresh strawberry puree or strawberry syrup
- Splash of orange juice
Instructions
- Pour the strawberry puree and Aperol into a flute and stir gently.
- Top with prosecco and a splash of orange juice.
If you don’t want to make your own strawberry syrup you can buy it online.
Frozen Strawberry Aperol Spritz
Ingredients
- 2 cups frozen strawberries
- 1 cup prosecco
- 1/2 cup Aperol
Instructions
- Blend all ingredients until completely smooth and slushy.
- Pour into wine glasses and serve immediately.
The blender I usually use is the Beast blender.
Aperol Spritz Jello Shots
Ingredients
- 1.5 cups Prosecco
- 1/2 cup Aperol
- 1 3 oz package of orange Jell-O
- 1/3 cup sugar optional
Instructions
- Add 1 cup of Prosecco, 1 package of orange jell-o and 1/3 cup of sugar to a sauce pan and cook on low for 3 minutes, stirring to dissolve the sugar.
- Add 1/2 cup chilled Prosecco and 1/2 cup Aperol.
- Stir well to combine.
- Add to mini cups and refrigerate for at least two hours to set.

Aperol Rosé Sangria
Ingredients
- 1 cup raspberries and chopped strawberries
- 1 orange sliced
- 1 lemon sliced
- 1 bottle rosé wine
- 1/2 cup Aperol
- 1/4 cup simple syrup
- Sparkling water to top
Instructions
- Combine the fruit, wine, Aperol, and syrup in a pitcher and chill for at least 2 hours.
- Pour into ice-filled glasses and top with a splash of sparkling water.

Aperol Coconut Margarita
Ingredients
- 2 oz tequila
- 1/2 oz Aperol
- 1/2 oz cream of coconut
- 1 oz lime juice
- Toasted coconut or salt and lime zest for rim
Instructions
- Shake the liquid ingredients with ice until very cold and well-combined.
- Strain into a rimmed glass filled with fresh ice.
You can use Coco Lopez or Real Exotics Cream of Coconut.
Pineapple Coconut Aperol Spritz
Ingredients
- 2 oz Prosecco
- 1 oz Aperol
- 1 oz pineapple juice
- 1/2 oz coconut syrup
- 1 oz club soda
Instructions
- Add all ingredients to a wine glass filled with ice and stir.
